House Wine Of The South (That’s Sweet Tea For You Yankees)

Happy Hump Day!!

In the South, iced tea is a serious thing. It is often referred to as “The House Wine of the South”. When you go into a restaurant and ask for tea, they will give you a glass with ice and some of the sweetest, most wonderful tasting tea poured over the top (diabetics beware).

As used in this Code section, the term ‘sweet tea’ means iced tea which is sweetened with sugar at the time that it is brewed. “Any food service establishment which serves iced tea must serve sweet tea. Such an establishment may serve unsweetened tea but in such case must also serve sweet tea. Any person who violates this Code section shall be guilty of a misdemeanor of a high and aggravated nature.”

Now those are some serious Southerners with a fantastic sense of humor.

Everyone seems to have their own special recipe for tea so I thought I would share mine with all of you. Please feel free to adjust and play with this recipe to your liking.


8 Orange Pekoe Tea Bags (regular size not family size)

1 3/4 cups White Refined Sugar (this is the stuff you buy in the big 5lb bags at the grocers)



Put on a kettle of water. While the water is heating take the tea bags and put them into a gallon pitcher. When the water is hot pour it into the pitcher carefully so as not to break open your tea bags. Let the tea steep for approximately 20 to 30 minutes. Fish out the tea bags with a slotted spoon (these can go into your compost and are fantastic for it). Add sugar and stir to dissolve. When sugar is completely dissolved add ice and cold water to fill the pitcher and stir.

That’s it!!! Now sit down and pour yourself a tea, garnish with a lemon and relax!!!
